Peppermint Bark

This is one of my favourite treats! Mint and Chocolate can NEVER be a bad combination!
Ingredients:
- hard peppermint candies (like candy canes)
- approx 1lb. chocolate chunks or melting wafers
Directions:
1. Crush the mints. Personally, I bought mini candy canes, unwrapped them all, put them in a small ziploc bag inside a paper bag and let my overly energetic and excited 3 year old have at them with a wooden toy hammer. Lots of noise, some flying shards of peppermint, but all-in-all, the perfect solution to my need to have crushed candy and his need to smash something!
2. Place chocolate in a microwavable dish and melt for about 1 min. Remove from microwave and stir until all chunks have completely melted and you have smooth chocolate.
3. Add crushed candy and mix together.
4. Pour bark over either waxed paper or a silicone mat on a baking sheet and spread thin. Put in the fridge to harden and cool.
5. Break into chunks and ENJOY!
Ideas:
- Use different chocolate to change it up a little. White chocolate with the crushed candy canes looks pretty. Dark with the candy makes a tasy combination!
- Use almonds instead of candy.
- This makes a great present at Christmas. Wrap up some different combinations of bark in a nice canister, cookie tin or a small plastic bag!
